A couple weekends ago I went to the 2013 Veg Food Fest. One of my favorite products I brought home was a bottle of Sacha Vida oil. This healthy oil is extremely rich in omega-3 fatty acids, vitamin E, and other antioxidants (carotene and tocopherols). Sacha Vida is a cold pressed oil extracted from Sacha Inchi seeds right in the Peruvian Amazon. It has a clean and subtle nutty taste that I love, and since you’re not supposed to heat it, I thought a salad dressing would be the best way to make use of the bottle I bought. This was a refreshing and tangy salad dressing that’s perfect for transitioning back into the Spring season. I hope you like it!
Sacha Vida Salad Dressing
(makes about 1 cup of dressing)
1/2 cup Sacha Vida oil
3 tbsp. white wine vinegar
2 tbsp. whole grain mustard
1/2 lemon
1 tbsp. honey
Pour the Sacha Vida oil and white wine vinegar in a bowl. Add in the whole grain mustard and honey. Squeeze out the juice from half of a lemon. Whisk together and drizzle on top of salad.
Note: The salad in the pictures below is made of spinach, red bell pepper, pecans, and a Gardein chick’n scallopini patty.

I am not a pure vegan but I love eating vegetable salad. The recipe looks very delicious and at the same time nutritious. I am glad honey is also included in the recipe, I love honey as it can give me good health benefit and at the same time our natural sweetener.
