With Superbowl Sunday coming up in a few weeks, I got inspired to make a recipe for everyone’s favorite snack, the slider. These came out soooo good. After researching some delicious recipes for sriracha-inspired sauces online, I created this easy spicy honey mustard glaze that makes the tofu so juicy and decadent. They are such a treat! Keep in mind this sauce could be used on any of your favorite proteins and is perfect to use as a plain marinade or even a dipping sauce or salad dressing.

Tofu Sliders with Sriracha Honey Mustard Glaze
(makes 8 sliders)
1 block firm tofu
1/2 cup whole grain mustard
1/4 cup honey
3 tbsp. sriracha hot sauce
2 tbsp. olive oil
1/2 tsp. salt
1/2 cup vegan mayonnaise (such as Vegenaise)
12 mini whole grain burger buns
1/2 red onion, sliced thin
1 tin pea sprouts
8 leaves green lettuce
Preheat your oven to 375 degrees. Press the tofu with paper towels, removing excess liquid, for about 30 minutes or more.
In a small bowl combine the salt, whole grain mustard, olive oil, honey, and sriracha. Mix well and then set aside.
Cut the tofu into 8 small rectangles, about 1/2 inch thick. Spread the tofu out flat in a baking dish and then pour about half of the honey mustard sauce on top, using a spoon to make sure you cover all the tofu. Bake for 20 minutes and then remove from the oven to turn the tofu pieces over and pour the rest of the sauce on top. Bake for another 20 minutes.
Build the slider sandwiches by spreading about 1 tbsp. of vegan mayonnaise on each bun. Top with a piece of tofu, a few slices of red onion, some sprouts, and a piece of green lettuce. Close up the sandwiches and serve warm. Enjoy!Pin It
