Veggie Pizza Night

Last Friday night I made my boyfriend’s favorite, a homemade pizza with lots of vegetables. Pizza is always a treat, so I feel better about eating it when it’s prepared at home with fresh vegetables and vegan cheese. I prepped all the ingredients ahead of time and asked my man to roll out the crust when he got home from work. Rolling out the dough is the only part I dread, and he seems to enjoy it…especially when he knows he’s getting a huge pizza in return.

The crust was a a fresh whole grain pizza crust from Whole Foods that we rolled out into a thin rectangle to fit on my sheet pan. I saved time with canned pizza sauce made from Italian tomatoes (also from Whole Foods), but added some fresh basil to give it a boost of flavor. Then I sprinkled on my favorite Daiya vegan mozzarella “cheese” and chopped mushrooms, green bell peppers, and Tofurky Italian sausage. While I was waiting for my man to get home, I slowly caramelized some onions, and added those as an extra flavorful topping. Last but not least, I sprinkled some black pepper on top, and drizzled a thin stream of olive oil around the outside of the crust to help it get nice and crispy.

I baked it at 500 degrees for about 13 minutes, so it was crispy on the bottom. OMG it was good. Sooooo good. That is all.

This is interesting! I thought you buy it but when I read your post I’m amazed because you only prepared it. Great job Laurel! I’m sure your boyfriend will like it so much! Can you share the recipe of your homemade pizza?
