Day 7: Healthy Desserts

Whole Foods had these gorgeous fresh blackberries on sale yesterday, so I picked up two packs and have been snacking on them all day. When I was out the store I also found some yogurt made from cultured coconut milk. Since I adore coconut milk ice cream, I thought I’d give it a try. I used to eat yogurt all the time, but I’ve been avoiding it for the past year because I’ve really tried to cut out most dairy products from my diet. I just feel better when I don’t eat dairy—especially my digestion. I recommend the coconut milk yogurt I used here, but feel free to buy regular yogurt if that’s what you like. Just look for an organic brand with high-quality ingredients.

My final healthy dessert for the week is a quick and easy parfait that’s also a great option for breakfast.

Blackberry Yogurt Parfait

Blackberry Yogurt ParfaitBlackberries
Plain yogurt
Chopped raw almonds
Honey

Put a handful of blackberries in a bowl and spoon a small scoop of yogurt on top. Top with a thin drizzle of honey and a sprinkle of chopped almonds for crunch.

I love blackberries! That looks so delicious! Oh, yes, I love So Delicious coconut milk yogurt, too! I think I’ll use agave, instead of honey to make this parfait, but what a simple and wonderful idea! Thanks!
