Blueberry Coconut Shake

Friday is here, and I am soooo ready for the weekend. With Halloween coming up, there’s bound to be some fun events here in the city, so I’m really looking forward to getting out of the house and away from my computer. Here’s a recipe for a shake I made this morning for breakfast. I used a young coconut I bought in Chinatown. It was so refreshing!

Blueberry Coconut Shake
(serves 1)

½ cup frozen blueberries
½ cup young coconut meat
1 cup coconut water
1 tsp. agave nectar (optional)
½ tsp. vanilla extract
2-3 ice cubes

Add all the ingredients in a blender, and mix on high speed until smooth. Enjoy!

Tip 1: If you can’t find young coconuts, you can use raw coconut butter or raw coconut cream as a substitute. Find these at your local health food store. Tip 2: Check out this video to learn how to open a young coconut. I use a meat cleaver to open mine, but Alexandra shows how to use a chef knife.

That looks delicious. All natural produce, but any fruit would work in this recipe. I really enjoy Mango and Passionfruit.
