It was so nice having an extra day off for Labor Day. I spent the weekend cooking, shopping, working out, and watching movies. I had to sneak some resting time in there because two of my close friends are coming up next weekend. I need to make sure I keep my energy up! On Saturday night, I made some spicy pineapple fried rice that came out amazing. This is a perfect dish to create if you have some leftover brown rice that you need to use up. The ingredients are simple and vegetarian. Check out the recipe below. I didn’t include exact measurements, so just eyeball it.

Pineapple Fried Rice

Green onions, diced
Yellow onion, diced
Red bell pepper, diced
Sesame oil (or peanut oil)
Pineapple, diced
Brown rice, cooked
Hot sauce
Salt (optional)
Heat up a deep sauté pan over medium heat. Pour a couple tablespoons of sesame oil in the pan and add the yellow onion, red bell pepper, and green onions. Sauté about 5 minutes, stirring frequently. Add the pineapple and sauté for another minute. Add in your rice and a dash of hot sauce (I like Sriracha hot sauce) and mix well. Saute for another 5 minutes until the rice starts to brown. Remove from heat and serve. Season with salt if you think you need it. Tip: Frozen pineapple works great if you can’t find a fresh one at your grocery store.
