Kick Up Your Salad

My favorite lunch is a big salad with lots of fresh vegetables and filling things like nuts, avocados, organic meat, or eggs. Two of my favorite additions lately have been pumpkin seeds and spicy chicken sausage. Yum! When you add lots of flavor and filling ingredients to your salads they become much more satisfying and will actually keep you full for the rest of your day.

Pumpkin seeds are a rich source of healthy fats, protein, minerals, iron, and more. I think they add a nice crunch and help bring out the flavor of the other vegetables in my salad. My favorite type of chicken sausage is from an all natural brand called Al Fresco. I buy the spicy jalapeno flavor with roasted peppers. Just a quick note on the sausages…I always make sure to peel off the outer casing (or skin) because I don’t like it. To remove it, I make a quick cut lengthwise with my knife, and then peel off the casing, using two hands to pull from the cut around the sausage so it comes off in one piece.

Here’s a picture of my salad from lunch today. Doesn’t it look delish? In addition to pumpkin seeds and the sausage it had avocado, carrot, tomato, onion, mixed greens, and olive oil and vinegar. I hope this inspires you to get a little creative with your salads and try some new ingredients.
