Hydrogenation is a process that pumps hydrogen into oils, making them more viscous in order to imitate products like butter (ie. margarine). Partial hydrogenation leaves some of these double bonds in-tact, with hydrogens on either side of the double bond, and this is called a trans- bond or trans-fat, which is very bad for our health. Full hydrogenation (&quot;Hydrogenated oils&quot;) breaks down all of these double bonds, making it purely saturated fat. Don&#039;t get me wrong, it is still bad since it is saturated, but not quite as bad as the trans-fats.

I agree with one of the above comments, this just continues to encourage me to put forth the the extra effort and make my foods at home. That way I know what my family is getting and it&#039;s the best I can give.

Yeah I actually just learned that about yeast extract and autolyzed yeast when I was researching for this blog post. Pretty tricky stuff. Just more incentives for us to continue making most of our food at home where we can control the ingredients.

Yes, you can still eat oils because they can still be a healthy choice for fat. But, instead of low quality oils used in processed foods that are genetically modified (such as corn, soybean, and cottonseed oils), opt for organic extra virgin olive oil or organic coconut oil/butter. They are safer and are packed with more nutrition. These oils are not cheap, but the quality makes up for the price. You can buy a big bottle and really make it last by using a little bit here and there.
