Cashew Goji Smoothie

Another day, another smoothie. The weather has been super hot the past few days, and it seems like cold juices and smoothies are the only thing I’m in the mood for. Let’s hope my new A/C makes it through the summer.

So, here’s the recipe for my latest shake. It has two superfoods that are great for your skin (among many other things): goji berries and coconut. I just threw together some ingredients I already had in the house, and it came out really good. Yes, I actually keep goji berries and coconut oil in my cupboard. I pick them up whenever I make a trip to the health food store, and then I always have them around to boost the nutrition in my recipes.

Nutrition facts! Goji berries keep your arteries from narrowing and prevent cholesterol from oxidizing and sticking to the inside of our arteries or causing blood clots. Research from China found that goji berries can increase the production of an antioxidant called superoxide dismutase (SOD) in our bodies. SOD prevents cholesterol oxidation. (Reference: Superfoods by David Wolfe, p. 25).

Cashew Goji Smoothie

½ cup raw cashews
¼ cup dried goji berries
1 cup almond milk
1 banana
1 tbsp. raw coconut oil

Soak the cashews and goji berries in water for 4 hours or more. Drain the water off and put them in your blender. Add the almond milk, banana, and raw coconut oil. Blend on high until smooth. Serve chilled or add ice cubes before blending.

Laurel,
I have never bought gogi berries, but must after reading so much about how great they are. However, I love to blend a 1/4 of peeled beet with a splash of vanilla with the cashews and other goodies you have listed. It’s beautiful and delicious. The cashews and vanilla help mask the ‘rooty’ taste of the beet.
