Fresh Pineapple Salsa

I experimented with a new salsa last night, and it tasted even better today once the juices had some time to marinate. This sweet pineapple salsa is great on top of spicy tacos, but it’s also a yummy topping for grilled fish or a plate of salad greens. I didn’t include specific measurements, because you can just eyeball it. I promise, you can’t mess this one up! I puts lots of pineapple and equally smaller portions of the other ingredients. Enjoy!

Fresh Pineapple Salsa

Pineapple
Cucumber
Red bell pepper
Jalapeño
Lime juice, fresh squeezed
Fresh cilantro
1 can black beans (no salt added)

Chop up the pineapple, cucumber, red bell pepper, and jalapeño into small cubes and toss together in a bowl. Drain the black beans and rinse them off with water in a strainer. Add the beans to the salsa and gently fold them in. Add fresh squeezed lime juice to taste and garnish with chopped fresh cilantro. Enjoy!
