In the wintertime, I start to miss my fresh vegetables and fruits. During the summer, when I have more garden veges than I know what to do with, and the grocery store is nearly giving away the usually very expensive dark berries, I stock up and spend my Sundays canning.

I use water to can in and skip the sugar that most recipes recommend. I find that with a touch of lemon zest, I'm just fine with the natural preservatives found in sugar.

My favorite canning book is "Preserving Nature's Bounty".
