One of my favorite summer dinners is a big salad with fresh salmon on top. It’s healthy and easy to make for yourself or for a group. I set out the number of dinner plates I need and then build each salad while I’m chopping everything up. Check out my recipe below.
Summer Salad with Salmon

Salad:
Arugula
Dandelion greens
Fresh basil
Carrot
Yellow bell pepper
Yellow onion
Cucumber
Vine-ripe tomato
Dressing:
Olive oil
Pepper
Lime
Balsamic vinegar
Salmon:
Wild-caught salmon
Salt
Pepper
Butter
Wash and dry the arugula and dandelion greens and grab a handful of each to put on the plate(s). Chop up fresh basil and sprinkle on top of each salad. Then add carrot, bell pepper, onion, cucumber, and tomato (however much you like).
In a bowl, pour in olive oil (a few tablespoons per salad). Then add pepper, fresh-squeezed lime juice, and a dash of balsamic vinegar to taste. Mix with a fork or wire wisk.
Wash the salmon and place skin side down on a baking sheet. Season with salt, pepper, and tiny shavings of butter (if you like). I think it helps flavor the salmon and keep it moist. Cover with foil and cook at 350 degrees for about 20 minutes. Cooking times will vary with size and thickness of salmon. Just watch for the dark pink to turn to light pink. Take off the foil for the last few minutes of cooking.
Using a fork, lift the baked salmon off the skin, and add it to the top of your salad(s). Drizzle dressing on top and enjoy!

Yes, the olive oil dressing has calories, and the salmon with a tiny bit of butter does too. But fats are nothing to be scared of.
What’s important is giving our bodies nutrition and fuel from whole foods to feel our best and have the energy to live the best life we can.
“Foods” with no calories or nutritional content will only leave us hungry for more and susceptible to disease and sickness.

Actually, its a portion control lunch box called Basikbox (www.basikbox.com) It portions your food so you don’t have to think about how many calories you are eating. This would be a great salad to carry in Basikbox.
