Orange Apple Ball
When I was a kid, I was lucky enough to have a Mom who made really good, nutritious school lunches for me and my sisters every day. When other kids had fruit roll-ups, I had carrot and celery sticks. When they had Little Debbies, I had turkey and veggie stuffed pita breads. At the time I didn’t always appreciate it, but I definitely do now. Thanks Mom!
Anyways, one of her best tricks in our school lunches was to pre-cut apple and orange slices and put them back together in a ball shape, alternating the slices back and forth. Sometimes she even used red and green apples to make it really colorful. But, the best thing about the Orange Apple Ball is that the juice from the orange helps keep the apple slices from getting brown.
I decided to revisit my childhood last night, so I made the Orange Apple Ball once again. Sure enough, the fruit slices are still fresh this morning and each bite of the apple has a little bit of orange flavor (and vice versa). I wrapped some foil around it to transport, but you can also use a small sandwich bag to keep the slices together. I thought I’d share this fun tip for anyone else who likes to save time and have healthy, homemade lunches at work or school.
