Making My Own Taquito
Have you seen the commercial for Taco Bell’s Chicken Grilled Taquitos? I have to admit they actually look quite yummy. Grilled, marinated chicken wrapped in a flour tortilla with cheese and one dipping sauce (salsa, guacamole, or sour cream). I checked out their website and the nutrition information shows that its not a bad option if you’re getting fast food (310 calories, 0g trans fat, 18g protein, 11g fat) (not including dips).
But, I think I’m inspired to make my own healthy taquitos. I’m going for whole-wheat tortillas, sauteed skinless chicken tenderloins, and a dash of low-fat cheddar cheese. I’m thinking of putting a few slices of avocado right inside and dipping the taquitos in a little fresh salsa. Broil in the oven for a few minutes to make the tortilla crispy and melt the cheese. I bet these are easy and portable to bring to work too!
