Whole Grains Fight Artery Hardening and Thickness

ScientificAmerican.com reports that a five-year Insulin Resistance Athersclerosis Study showed that people whose diets contain the most whole grains “had the thinnest carotid artery walls and showed the slowest progression in artery wall thickness.”  The findings suggest that whole grain consumption is a “wholesome and palatable opportunity” to reduce heart disease and atherosclerosis risk.

Wikipedia.org defines atherosclerosis as:  “a disease affecting arterial blood vessels. It is a chronic inflammatory response in the walls of arteries, in large part to the deposition of lipoproteins (plasma proteins that carry cholesterol and triglycerides). It is commonly referred to as a “hardening” or “furring” of the arteries. It is caused by the formation of multiple plaques within the arteries.”
