Brown Sugar vs. White Sugar

by laurel on June 19, 2007

New York Times reports that brown sugar and white sugar are similar on a nutritional level.  While brown rice is healthier than white rice, the same is not true for sugar.  Brown sugar is just sugar turned brown by the reintroduction of molasses.  Brown sugar does have calcium, potassium, iron, and magnesium that are otherwise absent in white sugar.  However, the minerals exist in miniscule amounts and really you don’t get the health benefit.

Nutritionally, brown sugar and white sugar are basically equal.  The difference comes in the taste and use for baking.
