Healthy Summer Recipe: TCOA Salad

Here is my quick and easy recipe for tomato, cucumber, onion, and avocado salad. Its healthy, nutritious, and perfect for the summer months. The recipe is flexible, so add more or less of any of the ingredients to suit your needs. Tomatoes, cucumbers, and onions have healthy nutrients such as lycopene, chromium, vitamin C, and vitamin A. The avocado and olive oil will give you the important daily dose of healthy, monounsaturated fats.

Tomato, Cucumber, Onion, and Avocado (TCOA) Salad

Ingredients:

  • 4 vine-ripened tomatoes
  • 1 large red onion
  • 1 large hothouse cucumber
  • 2 ripe avocados
  • extra-virgin olive oil
  • red wine vinegar
  • sea salt
  • pepper

Cut the tomatoes, onion, cucumber, and avocados up into bite-size pieces and place in a large bowl. Drizzle a couple tablespoons of olive oil and red wine vinegar (or your favorite vinegarette salad dressing) on top. Add salt and pepper to taste and mix well. Cover, refrigerate, and stir before you eat. Serve chilled.

*Note: This salad gets better as time goes on. It is wonderful right after you make it, but I think peak time to eat it is after it sits in the refrigerator for about 24 hours.

This sounds wonderful, Laurel! I bet it would be good if you threw in some macadamia nuts or pepitas, too!
